5. Matsui Sake Brewery

This tiny brewery was founded in 1726 and has been run by the Matsui family for more than 15 generations. The storefront carries different kinds of sake, but nama-zake is the most unique type of sake. It’s basically sake that’s neither pasteurized nor filtered. As it hasn’t been heated, this variety has a more complex, fresher flavor.
